Confetti Spring Salad (Pareve)
Recipe Ingredients:
- 3 cups baby spinach leaves
- 3 cups mixed salad greens
- 1 cup sliced strawberries
- 1 medium red onion, thinly sliced
- 1/3 cup toasted sliced almonds
Dressing
- 1/4 cup orange juice
- 2 Tbsp. honey
- 1 tsp Dijon mustard
- 1/2 tsp. poppy seeds
- Salt and pepper
- 2 Tbsp. olive oil
Serves 4 - 6
Toss spinach, salad greens, strawberries, onions, and almonds in a large bowl. Mix orange juice, honey, mustard, poppy seeds, and salt and pepper in a small bowl. Slowly drizzle in olive oil, whisking constantly, until the dressing is mixed. Toss salad with dressing.
