Passover Beef Roll (M)

Recipe Ingredients:
  • 2 lbs. ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1 package potato pancake mix
  • 3/4 cup matzah meal
  • 3/4 can tomato and mushroom sauce

Combine potato pancake mix with one egg, 1 cup water and 1 tablespoon matzah meal. Mix meat with all ingredients, except pancake mixture. Mix well together.

Roll out 1/2 - inch thick.

Put potato pancake mix on top. Roll up like jelly roll. Pour remaining tomato sauce over top. Bake at 350 degrees for 1 hour.
