Pesach Double Chocolate Muffins (D)

Recipe Ingredients:
  • 1/2 cup matzo cake meal
  • 6 tablespoons potato starch
  • 3/4 cup sugar
  • 1/4 cup cocoa
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder 
  • 1 teaspoon baking soda
  • 2/3 cup nonfat yogurt
  • 2/3 cup low-fat milk
  • 1 egg, lightly beaten
  • 1 package vanilla sugar, or 1 teaspoon vanilla
  • 1 cup chocolate chips

Mix dry ingredients. Mix wet ingredients. Blend the two mixtures just till moistened. Fold in chocolate chips. Place in oiled or non-stick muffin tins. Bake about 15 minutes at 400 F, or till they test done with a toothpick.
