Recipe Ingredients:
- 1/2 lb. cottage cheese
- 4 eggs, well beaten
- 1 teaspoon butter
- 2 teaspoons sugar
- 1 teaspoon vanilla sugar, optional
- 1/2 cup matzah meal
- Butter or margarine for frying
- Sugar and cinnamon or syrup for topping (optional)
In a large bowl combine cottage cheese with eggs. Slowly stir in remaining ingredients. Mix well.
In large skillet over medium heat, melt a liberal amount of butter or margarine. Fry the pancakes until light brown on both sides. Drain on paper towels.
Sprinkle with sugar and cinnamon if desired. Serve hot.
