Ingredients:
- 12 Prepared Matzah
- 5 1/2 C. Cream of Mushroom Soup (*Canned with water)
- 4 C. Cheddar Cheese, Grated (*Light)
- 4 C. Jack Cheese, Grated (*Light)
- 8 T. Margarine (*Vegetable Cooking Spray)
- T. Black Pepper
Preheat Oven 350 degrees - Preparation Time 30 Minutes - Yield 20
First you will grease a 14 1/2" by 10" glass baking dish with 1 tablespoon margarine. Cut the prepared Matzah into 1/2-inch strips, resembling extra wide egg noodles and set aside. Reserve 1 cup of each grated cheese to top casserole before baking.
Thoroughly mix cream of mushroom soup, cheese, and pepper in a large mixing bowl. Then, fold in the Matzah strips. Pour mixture into your baking dish and dot with remaining margarine and sprinkle 2 cups of mixed cheeses on top of casserole.
Bake casserole in preheated oven for about 1 1/2 hours or until browned. Serve hot out of the oven, and compliment with a tossed green salad and fruit.
