Sweet and Spicy Potato Latkes (P)

Recipe Ingredients:

  • 4 medium sweet potatoes, peeled and grated
  • 1 medium yellow onion grated
  • 1/3 cup all-purpose flour
  • 1/4 tsp. cumin (optional)
  • 4 large eggs, lightly beaten
  • Canola oil
  • Sour cream (optional)
  • Chives (optional) 

Toss potatoes and onion together in large bowl. Mix in flour, salt and pepper, and cumin if using, and add eggs.

Heat about 1/4 inch oil in a large, heavy skillet over medium heat. Place about 1/4 cup of the mixture per latke in skillet, being careful not to overcrowd the pan. Flatten slightly with back of spatula. Turn once, when underside is deep golden brown (about 4-5 minutes on first side and 3-4 minutes on second side.) Place cooked latkes on warm plate and repeat process with remaining batter. Drain for a few minutes on paper towels before serving.

If serving dairy meal garnish with a dollop of sour cream and chives.

Serves 8
