Sicilian Spinach (Pareve)

Recipe Ingredients:
  • 1-2 bunches fresh spinach (nearly 1 pound)
  • 1 tablespoon butter
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 chopped anchovies

Wash and spin dry spinach.

Remove any really large stems.

Heat butter and oil in skillet, add garlic and cook 1-2 minutes.

Add very dry spinach.

Cover pan and cook 3-4 minutes to steam spinach.

Stir in chopped anchovies and serve.
