Honey and Orange Salmon (Pareve)

Recipe Ingredients:

  • 3 Tbsp. Frozen orange juice concentrate, thawed
  • Tbsp. Olive Oil
  • 1/4 cup honey
  • 1/3 cup soy sauce
  • 2 scallions, thinly sliced
  • 1 Tbsp. finely minced fresh gingerroot
  • 4 6-oz pieces of salmon, filleted, skin removed
  • Package Carrots, cut into sticks
  • Chives, snipped into small pieces

Combine first six Ingredients and pour over fish in glass baking dish.

Cover and chill at least 1 hour

Remove salmon, reserving marinade.  Grill or broil 4 inches from heat source, turning once and brushing several times with marinade.  Cook until fish is thoroughly done and flakes easily when tested with fork, about 20-25 minutes.  Discard remaining marinade.

While fish is cooking, toses carrot sticks with olive oil and place in small baking pan. During 3-5 minutes of cooking, place carrots in oven. Before serving, scatter carrots over salmon and sprinkle with chives.
